What's for Dinner, Sunday, May 10. 2026

This is another Mollie Katzen favorite of mine: Szechwan Tofu Triangles in Triple Pepper Sauce.

It has onion, garlic, soy, sherry, and obviously peppers.

I'm going to do the tofu the "high-flavor" way by boiling the triangles in salted, seasoned water before it goes into the sauce.

Pineapple ginger kombucha.

Laid in bed reading and snoozing ’til all hours so now I’m finally up and just finished breakfast—a big bowl of TJ’s chocolate coffee granola.

I suspect my son will have dinner plans in hand… eventually. He’s already fed the cats and birds, bless him.

Usually we would be doing this with family, but everybody seems to have some kind of coughing thing, so we will be doing this just for us.
Menu will include sandwiches, scones with homemade clotted cream, and mug cakes.

Going to the Beef House with family. Not certain what other family members are going to order, but I plan on eating fried cod, corn, baked potato, creamy broccoli soup, salad with poppy seed dressing, and dinner rolls. Appetizer fried frog legs.

I've thought about trying it. Thanks for holding my hand. I feel more confident knowing someone who has done it

I was easy on Mom today. I fixed some frozen fish and shrimp and made some hash browns. Not sure if I'll have dessert

My hubby and 3 sons. 🙂

I had broiled salmon on top of sautéed greens, white beans, cherry tomatoes, and artichoke pureë. Mixed green salad with balsamic dressing. A glass of Cabernet and dessert which I brought home, carrot cake.
It was delicious.

But stick with me here - Hot Brown Hot Dish.

A Kentucky Hot Brown sandwich is open faced; toast layered with cooked turkey, Mornay (cream sauce with cheese) sauce, thinly sliced tomato, more cheese (Parm) and broiled till bubbly brown and then topped with crispy bacon. Obviously, you eat it with a knife and fork.

I'm making this in a casserole without the bread. I'll have brown soda bread on the side. Maybe a salad. I already have the turkey because I canned the leftover Thanksgiving turkey in 2 quart jars and this'll finish the second one off. I should get 4 servings, so we'll see how it reheats once.

And I'll have to come up with something later in the week for the really good broth from the jar. Maybe noodle soup. Waste nothing.

Had a ton of spinach my BIL gave me and had to use up. Steam-fried in evoo and veggie broth: chopped onion, sliced mushrooms and minced garlic. When soft I added 3 bags of spinach and cooked it down in a few minutes. Added canned cannellini beans and tossed in some cooked pea protein infused penne. Vegan parm on top after plating. Cheers!🥂
Cher, your tofu triangles sound great. Gotta try that boiling method soon.
