In a 375 deg oven place an 8 inch square pan with 2 tbsp butter - let it melt and sizzle.
In a large bowl, melt 1 stick of butter - then stir in 1/3 cup brown sugar and 1/3 cup white sugar.
Beat in 2 eggs.
Add 1 cup buttermilk and 1/2 tsp baking soda.
In a medium bowl, whisk together 1 1/3 cup yellow stone ground cornmeal and 2/3 c whole wheat flour, 2 tsp baking powder and 1/2 tsp salt.
Add the solid to the liquid, mix quickly (a few lumps are OK), then pour into the hot pan. Bake at 375 for 25-30 min until nicely browned.
Moist, very buttery/corny/rich tasting - we like it with home made strawberry jam!

(6,581 posts)Seems like it would come out awfully sweet, more cake-like with that much sugar and butter.
Isn't sugar in cornbread more of a New England/Northern thing than a Southern thing?

(60,014 posts)better than the unsweet, all cornmeal southern type (heresy, I know...we don't like the vinegary typical eastern NC BBQ either)

(1,089 posts)This is what I grew up with - to me, sweet cornbread is something better suited for dessert! I've made this with cheese, jalapenos, bacon - just add what you want.
preheat oven - 450 deg.
grease 8-9 in. cast iron skillet or 9-in. square glass baking dish & heat in oven
2 eggs
2 cups buttermilk
1 tsp. baking soda
2 cups yellow stone ground cornmeal
1 tsp. salt
Beat eggs, buttermilk and baking soda together; add cornmeal and salt.
Pour into hot pan or dish
Bake for 20-25 minutes
