Looking For A Shredded Chicken Sandwich Recipe.

Just wondering if any of you have a good recipe for shredded chicken sandwiches. We're having about 30-40 people over for Christmas Eve and I'm not going to make a dinner so chicken sandwiches will have to do. What kinds of herbs and spices do you usually add? I've made shredded chicken before, but it's always just kind of bland. I looked at Allrecipes.com and a couple of other places, but nothing really seems to stand out. Any ideas how to spice them up?

Cold sandwiches? If so, maybe mix the shredded chicken with some cole slaw, serve on hand-size rolls pinto Dec 2012 #3

I'm a big garlic fan so I'll make sure to put some in. I never thought of thyme maybe I'll try that too. I saw another recipe that called for Cream of Mushroom soup and Ritz crackers added in. Not sure how that would taste.

spread well with a spiced mayo blend (black pepper, paprika, ginger, garlic and lime juice to taste), and thin slices of cucumber, some romaine leaves.

What ever you choose, have a good one. 30-40 guests are a hand full.
