Mine is probably turkey salad sandwiches

(149,681 posts)I take a pretty good sized casserole dish, or something that's oven-proof or microwavable.
In it, I make layers.
Bottom layer: cut up turkey
Top layer: stuffing
Pour gravy over the whole thing; cover.
I usually nuke it, but it can also be reheated in the oven.
We love it!

(60,018 posts)Onions, sweet peppers, garlic, black beans, rice, corn, the turkey meat, tomatoes, and the turkey stock are the main ingredients - spiced with chili power, cayenne, cumin and black pepper.
That's dinner tonight - left over from Thanksgiving!
serve with crumbled taco chips and grated cheddar

Turkey salad is easy, just dice the turkey add a chopped up hard boiled egg, mayo and pickle relish that is all.

(51,907 posts)I just use cheese and regular red enchilada sauce, but a variant would be nice.
Red chili overwhelms the delicate turkey, while the green chili and sour cream do not.
A sandwich of turkey with a little mayo and salt and pepper runs a close second. Sliced tomatoes and lettuce on it are okay, too.
