I take a pretty good sized casserole dish, or something that's oven-proof or microwavable.

In it, I make layers.

Bottom layer: cut up turkey

Top layer: stuffing

Pour gravy over the whole thing; cover.

I usually nuke it, but it can also be reheated in the oven.

We love it!

Never made turkey salad, but I do love a turkey sandwich with dressing and mayo.

Onions, sweet peppers, garlic, black beans, rice, corn, the turkey meat, tomatoes, and the turkey stock are the main ingredients - spiced with chili power, cayenne, cumin and black pepper.

That's dinner tonight - left over from Thanksgiving!

serve with crumbled taco chips and grated cheddar

Turkey salad is easy, just dice the turkey add a chopped up hard boiled egg, mayo and pickle relish that is all.

but I am still looking for that just right recipe! All I know right now is that it will involve green chilies, green enchilada sauce, sour cream and cheese. Oh, and turkey! LOL

I just use cheese and regular red enchilada sauce, but a variant would be nice.

Red chili overwhelms the delicate turkey, while the green chili and sour cream do not.

A sandwich of turkey with a little mayo and salt and pepper runs a close second. Sliced tomatoes and lettuce on it are okay, too.

I also like Turkey Divan, Turkey Tetrazzini and Turkey Noodle Casserole. And a Thanksgiving sandwich with sliced turkey, bread stuffing and cranberry sauce.

I don't have a recipe, but a friend's mom used to make it. Basically, Chicken
Tetrazzini only with the other white bird.
