(20,776 posts)We call curry kare rice and it is a very popular home cooked meal. Studies have shown that an ingredient found in curry, curcumin, boosts brain activity in elderly people and reduces the risk of Alzheimers disease.
Ingredients
1/2 lb chicken thigh (chopped)
1 lb eggplant (sliced thin, about 2.5″ x 0.5″ each)
1 medium onion (sliced)
1 red bell pepper (chopped)
1 carrot (chopped)
2 bowls of steamed rice
Spices
2 tbs curry powder
4 tbs vinegar
1 tsp salt (for vegetables)
1/2 tsp sugar (for mayonnaise chicken)
1/2 tsp salt (for mayonnaise chicken)
Preparation
Mix sugar, salt and1 tsp water in a small bowl, then mix with chicken, and cool for 10 min in refrigerator
Put all the vegetables in a large bowl, add salt, and stir
Heat the oil in a frying pan then grill chicken for 2 minutes
Add vegetables, vinegar, and 1/2 cup of water, cover, and cook for 30 min on low, stirring occasionally. Add a little extra water if mixture dries up.
Add curry powder and mix
Serve on steamed rice
Yield: 2 servings
Time: 20 minutes

(16,334 posts)For some odd reason, I had some hamburger meat in the freezer that I need to use up. I don't really use it much these days so I have no idea why it's in there.
I have collards, spinach and green beans and will probably use what seems to be going bad first.
The teens aren't wild about the cauliflower mashed "potatoes" but hey, it's Monday!

(12,253 posts)lamb korma I bought outside Grand Central Terminal a few weeks ago. I stood on the sidewalk in the freezing cold, muffled and wrapped up to a fare-thee-well while scarfing down this most delectable (and sloppy) treat. Mr. Pup marveled that I was not wearing even one drop of it when I finished! I have a whole collection of blouses with splashes down the front.

(35,687 posts)Only not blouses, T-Shirts. I had a brand new J.Crew that miraculously appeared with a round stain on it right in the middle. I'm so mad. Wore it once. Currently looking for suitable applique. Usually I just have to throw them away.
But this made me laugh. There is hope:
Mr. Pup marveled that I was not wearing even one drop of it when I finished!

(12,253 posts)isn't really efficient. I need a bib in most cases. I save a couple of spoiled t-shirts to do housework, but I have tossed many because of my messy feeding. When I still had back teeth, steak au poivre was one of my favorite meals. I miss steak!

(12,253 posts)and a few fries from lunch. Mr. Pup back at the office tonight and we don't know when he'll be done. He worked all weekend, too, until midnight on Saturday and until 1:30 Sunday night/Monday morning. No overtime for this, but things in his office are finally getting better. The partner who was so abrasive he was not allowed to interact with clients recently got booted out. This can only help. In the meantime, they are shorthanded and stacked up with work. After that, they are moving. At least we had lunch together today!

(12,253 posts)His company does courtroom graphics. It's a feast-or-famine business. But speaking of April 16th (I do the taxes) I deposited a tax refund from the state today! Thankfully, tax season is over for us!

(12,253 posts)week in and week out whether he is at the office or not. He does his own projects in his 'spare' time. I'm very proud of him for working out lately. He's getting shoulders for the first time since I met him. He is in charge of motion graphics (animation) for the firm, so for the past few years the famine part has not been a threat, thankfully.
