What's for Dinner ~ Monday May 6th

For once I actually made what I intended to! So tonight will be leftover Muffin Cup Meat Loaves with roast veggies.

I really like making the meatloaf in the mufin tins. Great texture, very moist and the perfect size.

it was fine. I did use a cookie sheet underneath the trays just in case. I also used stuffing mix instead of breadcrumbs and cooked them longer at 350. Just moist and yummy.

I don't have my last experimental recipe - it's on my computer that died - but I read the reviews of the linked recipe above, and then started tweaking the base recipe. I usually add sauteed carrots and onions - have occasionally subbed rice or oatmeal or packaged stuffing mix for the bread - and replaced the dry soup mix with whatever herbs I was in the mood for...I have also thrown in a handful of shredded cheese at times. I also usually replace the broth and tomato paste with ketchup. I've thought about adding apples and nuts too.

The reviews have some great ideas and are worth reading.

It's only myself eating veggie, so there was lots of that filling left. just baked a few more tortilla chips and added fresh lettuce, tomato, salsa and lime wedges for the second meal.

This is something I'd make again, definitely.

I made these pork chops yesterday and they were YUMMY!!!!

A couple of the reviewers said they were going to try the same recipe with chicken.

(note: cut the salt in the rub in half.... per many reviewers!!)

Either let it sit overnight or add some fresh lime juice to the marinade. Or both. Maybe some Caribbean spices in the marinade? But, tell the truth, I liked the result on this try. Simple and a nice piece of chicken.

Still have another thigh for tomorrow. Think I'll slice and pan burn a bit with pineapple for rice.

(I *never* give a marinade enough time to do the job. )

Basically opened the fridge to see what was on hand. Chicken and lime yogurt. Looked around to see some ideas. All were about the same, for breading and baking. So I just went with what I had. Good stuff.

Give it a run.

Didn't do too good a job of rolling it (though the string held); cooked it at 325 for about an hour and a half. Came out partly rare (in the center), which is how I like it.
