Herby Lamb Chops

I love lamb prepared just about any way. But the grill seems to bring out the best in it. I've got a big patch of oregano that's taken over my herb garden. So I put it to good use by laying a bunch of it on the grill and cooking meat directly over it. It infuses the meat with a nice smokey, herby flavor.

Ingredients
1 package lamb loin chops (The ones from Costco are from Australia and are full of flavor)
8-10 cloves garlic, minced
8-10 sprigs of rosemary, minced
olive oil
black pepper to taste
a whole bunch of oregano

Directions
Coat the chops with olive oil, garlic, rosemary, and black pepper. Let marinate for a couple hours. Get the grill nice and hot. Rinse oregano and place on grates. Turn heat down to medium and cook lamb directly on oregano until done. Don't overcook.

Which is the next recipe on my blog. And a salad. The orzo went perfectly with the lamb. Highly recommended.
