Herby Lamb Chops
http://cookingwiththemark.blogspot.comI love lamb prepared just about any way. But the grill seems to bring out the best in it. I've got a big patch of oregano that's taken over my herb garden. So I put it to good use by laying a bunch of it on the grill and cooking meat directly over it. It infuses the meat with a nice smokey, herby flavor.
Ingredients
1 package lamb loin chops (The ones from Costco are from Australia and are full of flavor)
8-10 cloves garlic, minced
8-10 sprigs of rosemary, minced
olive oil
black pepper to taste
a whole bunch of oregano
Directions
Coat the chops with olive oil, garlic, rosemary, and black pepper. Let marinate for a couple hours. Get the grill nice and hot. Rinse oregano and place on grates. Turn heat down to medium and cook lamb directly on oregano until done. Don't overcook.
