Garlic mashed potatoes and gravy and lemony-garlicky green beans. Every once in a blue moon I need fried chicken.

Appetizer: white bean dip with chopped arugula on top (using crackers; wanted crostini but couldn't find a day-old baguette)

Main course: pork braciole with tomato sauce. Pasta and eggplant.

Dessert: yogurt with blueberries

Baked, scooped and mashed with sour cream, some half and half, black pepper. Folded with steamed Brussels sprouts, diced; some crumbled blue cheese; some French's fried onions, crumbled. Re-stuffed, re-baked till all's hot. Then run under the broiler to just brown the top.

are so good. And pretty easy to make, too.

Imaginative, this version that you describe.

I have heard of people having parties with a baked potato bar where guests make up their own toppings based on different types of ingredients the hostess puts out. Sounds like a good idea for cool fall weather.
