Lemon Curd.

I am seriously addicted.
S e r i o u s l y.
I can only find Dickinson's around here, which is good and nicely tart, but I am shopping around for a good recipe.

Anyone have a favorite recipe?
And how do you like to use Lemon Curd? (assuming you do!)

1. I've made Mark Bittman's but I keep a jar of Dickinson's too...

I use it in between the layers of lemon cake and I like it sandwiched between a basic sugar or shortbread cookie. Mmmmm....

Thanks for the recipe! I like the fact that it has lower sugar content than others that i've seen!

about a tablespoon on a plain tortilla. I'd love it as a crepe - thankie for the suggestion!

4. Lemon curd recipe

1/2 cup unsalted butter (one stick)
1 cup granulated sugar
1/2 cup freshly squeezed lemon juice (3 to 4 lemons)
Zest of one lemon, finely grated
1 pinch salt (if you have salted butter, omit the salt)
6 large egg yolks

In a heavy saucepan, melt butter over medium-low heat. Remove pan from heat & add sugar, lemon juice, zest & salt, whisking to blend. Add the yolks, one at a time, whisking each until it disappears.

Cook the mixture over medium low heat, whisking constantly, until it thickens & leaves a path on the back of a wooden spoon when a finger is drawn across it. DO NOT ALLOW IT TO BOIL.

Let it cool. It will keep in the frig for a month and in the freezer for three months.

It's my mother's favorite food so if I make it when she's coming over I always make a double batch and send what's left with her. It keeps for up to 2 weeks. I usually serve it on a polenta cake.

My sister made some homemade donuts with lemon curd filling a month or so ago.... they were so delicious I'm still thinking about them now! She said they were super easy to do. She's nuts about lemon curd - has it with bloomin everything! So I can definitely recommend putting them in some donuts!
