(28,496 posts)No, not "carnival" as in "I'm on a cruise ship destined to loose sanitary facilities any second," or "I'm in South America, dancing in the street, dressed like Carmen Miranda." I'm going to the Greeley Stampede where I will no doubt be feasting on caramel apples on a stick, roasted corn on the cob dripping with butter, definitely something with roasted meat bought from an unsanitary roach-coach carny truck. (It's primarily a rodeo in a meat packing town so I'm sure there will be meat a-plenty!)
Never been to this event before. So this is just my guess at the cuisine that awaits me, based on other fairs I've been to in Colorado. I realllllly hope for the roasted corn. They roast it over open flame in the husk. Tender and sweet every time!

(28,496 posts)Lynyrd Skynyrd will be the headline show tonight. I have a morbid curiosity to hear them after all these years and when half of them died - though won't pay the extra ticket price to see them. But sound leaks outside the stadium, right?
Really most hoping they don't get more hail tonight! Did you get any last night? Hellova lightning show where we were in lower Weld Cty., but only some rain and a few relatively light wind gusts.

(24,146 posts)spectacular lightning, booming thunder, sideways rain, pea-sized hail. there was a moment when i wondered where the hell the hurricane came from. our intersection was almost entirely standing water. fantastic storm.
i hope those folks don't get stuck out in the weather.

(28,496 posts)Last thing we did was ride the ferris wheel and we could see some virga falling just north of the stampede but it didn't look like anything was heading our way. By the time we were walking to our car 10 minutes later it had started to rain those fat drops pretty steadily. By the time we hit 85 to head home, we had driving rain, more fantastic lightning, and pea-sized hail. We got outta Dodge just in time! Feel bad for the folks who were still there, though.
Oh, and ended up eating a home-made pulled pork sandwich with cole slaw and that roasted corn on the cob from the only local food stand present, a catering company out of FoCo. It was great! But they didn't have business cards with them (!) and the music was so loud we couldn't really talk so I can't tell you who they are.

I like to roll the wrap tight, foil it and chill. Then slice into rounds. We'll hit 100 here today so I'm putting together cool stuff to pick on.
(on edit) Blended tuna, avos, hummus, pear tomatoes (ate the cherry tomatoes out of hand), garlic, scallions, lime and some tabasco. Turned in some shredded lettuce, wrapped and chilling. A finger sample tasted pretty good.

(28,496 posts)I had this great ratatouille recipe 25 years ago, hand-copied out of some church cookbook a friend had. Lost it in The Great Basement Flood of '95 (backed up septic system - ick!) and haven't found anything that matches my memory of it. What's your recipe? I'd love to see if it compares.

(146,218 posts)1/2 lb. ripe plum tomatoes, halved
1 medium yellow squash cut into 1/2-inch rounds
1 baby eggplants cut into 1/2-inch rounds
1/2 large red bell pepper, stemmed, seeded, and halved
1/2 large red onion cut into 1/2-inch slices
1/2 small head garlic
2 T extra-virgin olive oil
1/2 tsp. herbes de Provence
Kosher salt and freshly ground black pepper
1/3 cup pitted Kalamata olives
1 Tbs. chopped fresh basil
1 tsp. chopped fresh marjoram
Prepare a high gas grill fire.
Toss the tomatoes, zucchini, eggplant, red pepper, onion, and garlic with 1 1/2 Tbs. of the oil, the herbes de Provence, and a generous sprinkling of salt and pepper.
Put the vegetables (tomatoes cut side up) and garlic on the grill in a single layer and cover. Grill the tomatoes without turning until their skins have darkened and their flesh is soft; grill the remaining vegetables, turning once, until grill-marked and tender, about 8 minutes. Transfer the tomatoes and garlic to a medium bowl. Transfer the remaining vegetables to another medium bowl and let cool briefly.
Coarsely chop the squash, eggplant, bell pepper, and onion; return to the bowl and add 1/2 of the olives to the bowl.
Slip the garlic cloves out of their skins. Add the remaining olives, the tomatoes, and the remaining oil; blend until smooth.
Toss the tomato-olive sauce and the basil and marjoram with the warm vegetables in the bowl and enjoy with warm crusty bread (and cheese!!).
It can also be served on pasta or as a side dish, but I like it just like this.

(28,496 posts)Used only sweet peppers and cumin. Came out sooooo tasty! I wish you equal chili success. Will be even yummier now that the outside temperature has lowered to "reasonable."

(24,146 posts)it'll be a three bean chili here with plenty of heat. it's a lot cooler here today than it's been for a bit, that's part of why i decided to make it.

(3,744 posts)Grape tomatoes cut in half, 6 cloves of garlic chopped, several basil leaves cut up, salt, pepper, crushed red pepper and lots of olive oil. Let it sit and marinade 3-4 hours. Later, boil the pasta (I'm using angel hair) and drain. Poor pasta in the bowl with the tomatoes. Yum. Also some french bread and a salad. Not a lot of cooking.
