Grilled carrots with balsamic glaze

http://cookingwiththemark.blogspot.com

Summertime...
and the grilling is easy. I love grilling and am always looking for new things to bung on the grill. My latest thing is grilled vegetables. In the case of carrots, they're so dense that I felt they'd burn before they were cooked through. So I steamed them for a bit before grilling. I put a bunch of fresh oregano under the grill basked which gave them a nice smokey taste. And grilling really seemed to intensify their flavor and color. Nice presentation.

Ingredients
6-7 carrots, chopped
bunch of fresh oregano
tarragon, chopped
balsamic glaze

Directions
Peal and chop carrots. Steam for about 5-10 minutes until slightly tender. Then place a bunch of washed oregano on the grill and cook carrots over it in a grill wok/basket. When done, put in a serving bowl, squirt balsamic glaze over it, sprinkle a bit of tarragon on top, and serve.
