2. Leftovers. We went to a picnic yesterday and I made way too much food for my contribution.

So we are having tabouli, cannellini beans with tomatoes salad, and veggie burgers. this will probably be my menu for the next week. It was a beautiful day for a picnic, but not many people showed up (it was an office picnic from my husband's seasonal tax job).

3. Veggies on the train

I was scared of train food (it might be good--I wouldn't know) so I stayed up late last night making good and healthy things like spinach, kale, fruit, etc. for my trip. I travel 20 hours on Amtrak, so I'll need some goodies now and then.

That sounds like a great hot weather menu for the week, LtH.

10. Hi. AMTRAK fan and frequent rider. Here's some ideas -

I pack a whole range of simple, finger foods in ziplocks. All "travel size" and just enough for your trip meal needs.

Small tubs of yogurt.
Raisin packs.
Apple sauce.
Fruit bars.

Butter crackers or sliced baguette.
Packaged cheese sticks or sliced cheese from home.
Sliced salami or other type of meat.

Those sliced veggie packs with carrots, celery, etc. and dressing.

Single serving V8, OJ, apple juice, etc. Single serving liquor or wine nips.

Sliced apple, whole banana. Fig Newtons, my choice, or some other snack.

Tea bags.

Plastic knives, forks and spoons are available. I usually buy a carton of milk in the cafe car, then pick up the extras. Including hot water, plastic utensils, mayo, mustard, pepper, etc.

11. Oh, 20 hours is a good leg. Depending on your train time, if you need a full on meal - breakfast.

The dining car is really nice. You get to sit with other riders, chat, sit back a bit and it's full service.

And recommend the glass topped "sightseeing" car. In days past, I'd sack out there and look up at the stars.

Haven't tried these before, but they get pretty good reviews. They come frozen and you just defrost then grill for 2 minutes a side.

Will report back.

Tonight's recycled dinner is leftover roast chicken in gravy, spoonbread containing leftover corn on the cob, and sliced tomatoes.

Most of these prepared meals are way too salty for my taste. But this is a quickie, I like to have some on hand. Plus I have plenty of sauces / spices to kick it up if needed.
