The meal for your dad sounds great. Smashed potatoes...a go to meal by itself, imo.

(175,753 posts)Going to the triplets' for dinner, though only the girl will be there (as well as her parents and other family members). The boys left this morning for Boy Scout camp in northern Wisconsin. Since it's all of 64 degrees here, it must be COLD up there.

(175,753 posts)We had spaghetti, tomatoes from my brother-in-law's garden, watermelon and chocolate chip cookies. We were able to sit on the deck for a bit (me wearing a sweater and jacket because I'm always cold) but it was nice to be outdoors and not 95 degrees like it was a week ago Friday. I'm sure you've heard this because it's said about a lot of places, but if you don't like Chicago's weather, wait a minute....
On edit: It's supposed to be 40 tonight where the boys are. Happily, they have warm sleeping bags and lots of warm clothes.

(20,277 posts)I didn't realize the stuff I had been making had a fancy Italian name. I made it the first time out of necessity. I had some cheap parm, spaghetti, butter and of course, pepper.
I put the water on to boil, so I'm going to have some tonight.

(146,218 posts)I've made some similar kinds of things, but this just rose above anything I had made before. The sauce was like an alfredo, but without the cream.

I'll be having Spinach and Black Olive pizza.
I found a frozen, store brand spinach pizza, that is really good. NO red sauce, and a great mix of white cheeses. It's a nice simple base that I can add meat or veggies to, depending on what I have on hand.
I usually add garlic to it, and hit it with black pepper and a little olive oil when it's done.
I'll chuck in a meatloaf in the oven for Bill about 1 am, so it should be ready when he gets in.

(106,886 posts)Tried a frozen 8" pizza from the market once and thought it was pretty good. Topped and set in a real hot oven. Forgot the brand.
A lot of pizzerias in New England have simple cheese, no red sauce pizzas, you choose the add ons.

It Spinach with Fontina, Parmesan, Mozarella and Romano cheeses. Muy yummy. We like other pizzas in that line too. When we get on a big pizza kick we make our own dough, but this brand is good when you just want something quick.
