And I wish I could get figs here. Love them, but it's not possible to find fresh figs where I live.

I've always liked corn pudding--here's a recipe from our local paper:

Spicy Summer Corn Pudding

5 ears corn
2 eggs
3/4 C buttermilk
1/4 C flour
4 T butter melted
1 t ancho chile powder (more or less as to spicy taste)


Preheat oven to 350. Butter a 1-quart casserole
Cut kernels off cob and place in bowl. Add remaining ingredients and stir to combine.
Pour into prepared dish and bake 30 minutes or until puffed and golden.

Some recipes call for 1/2 t sugar and salt. I don't think they're needed.
Can easily be doubled for 2-quart casserole. Bake 40 min.
