Grilled endive with herb mayonnaise

Ingredients
6 endives, halved lengthwise
olive oil
1 egg
a couple sprigs of tarragon, chopped
6 chives, minced
vinegar
sea salt

Directions
To make the mayo: crack an egg into a Mason jar. Add 1 cup olive oil, a splash of vinegar, a pinch of salt, and herbs. Put a hand blender into the bottom of the jar and turn it on. Let it blend for 5 seconds and then slowly raise it. The whole process should take 20 seconds. Don't raise and lower the blender. Just process it in one slow movement. Then coat the endive with a bit of olive oil and grill until it's nicely charred. Serve with mayo drizzled over it.
