we've now got 8 big freezer bags full of them....they end up on our morning cereal, lunchtime yogurt, and Sunday morning dutch babies!

Our goal is always to freeze enough to get us through the year - we buy full flats at the farmers market....blackberries too!

And, yes, Blueberry pie, blueberry betty or crisp....yum!!!!!!!!!!!!!!!!!

preheat oven to 425 - put an oven proof 10 inch skillet in to preheat along with it.

Mix in a bowl - per person - 1/3 c flour, 1/3 c milk, 1 egg (so for my wife and I, and that size pan, 2/3 c milk, 2.3 cup flour, 2 eggs).

Add 1-2 tbsp butter to the pan - return to oven. when it is sizzling, remove pan, cover teh bottom generously with fresh or frozen blueberries, mix of blue and blackberries - or apples (in the fall) - add 1 tbsp cinnamon - don't skimp!. Return pan to oven.

Once the fruit is sizzling nicely, remove pan from oven, add the batter, covering the fruit, return to oven, bake for 25 min.

It will puff like a combo of a popover and pancake - we serve with real maple syrup.

Nothing so easy tastes so good for breakfast!

I've used half whole wheat, half white flour. But anything but cow milk impacts the result (doesn't rise properly) - skim is fine. Tried almond or soy - not fine!

When the restaurant's server comes to your table, they (used to anyway) run and yell out they have a Pannekoeken coming through so everyone gets out of the way, so they can serve it before it falls.

morning. Wish I had some blueberries
but I don't think I do, but I do have some apples!

BTW - I live less than half a mile from a pick your own blueberry farm...... so I've got a couple quarts of those puppies in the freezer. I'm thinking about planting some blueberry bushes too.
