Figs and Meyer lemons

I went a bit nuts at Costco and now we have a whole lot of fresh figs and Meyer lemons. We've already eaten a bunch of figs and made a Shaker lemon pie, but we're still awash in the things and there's only two of us to eat 'em. I was thinking maybe trying making lemon and fig preserves. Suggestions anyone?

I'm unfortunately married to a man who won't eat anything the least bit unusual, so that's out for dinner plans. Savory has me thinking, though, that I could probably make preserves with balsamic vinegar, honey, and a bit of bourbon to make a sauce I can serve alongside Thanksgiving dinner.

I know that dried lemons (yes, whole dried lemons) are commonly used in Persian and SWAsian cooking. They poke a hole or two in the dried lemon and toss it in the pot. It gives the stew a very bright flavor. http://www.ishopindian.com/nirav-dried-lemon-whole-pr-23663.html



I found a wikihow on how to dry figs--that might be a plan for at least some of them:

a snippet:

To add sweetness to your figs before drying, dissolve 1 cup (236 ml) of sugar into 3 cups (709 ml) of water and bring it to a boil. Add the figs to the water and sugar mixture and allow them simmer for approximately 10 minutes. Remove the figs from the water and then follow the steps for sun or oven drying.

It's a Med/North African thing; we get ours canned from Nice because they're so nice (get it?!) but they're easy enough to do at home. Here's a quick recipe - if you don't want to cut the lemons so deeply, you can just trim one end and stab them with a paring knife, then pack salt in the cut.

9. Fig, honey and ricotta tart

1 pkg puff pastry
4 egg yolks
1/4 cup sugar
15 oz ricotta cheese
1 tsp vanilla
4 tbsp honey
2-3 fresh figs

Roll out puff pastry to desired shape, and bake for about 15-20 minutes. Beat eggs and sugar. Add in ricotta and vanilla and continue mixing. Spread onto the pastry, and bake for another 20-25 minutes. Drizzle with the honey, and top with the figs.

This was really easy to make, although to be honest, I think I'll try it with mascarpone next time instead of the ricotta

I love fresh figs. We had a fig tree in our yard in Spain and every morning, ate breakfast off the tree. Delectable!
