I'm going to start up the grill shortly and grill a whole eggplant to make a dip or spread with.
For dinner, some beef kabobs. Grilled peppers and onions, too.
Rice.

This is the first time I've tried it and I see I've already made a mistake by buying a domestic Masala.
But I'm going to ignore the "expert's" advice and go ahead........ because I'm fully committed to doing this.
I'm using a slightly reduced recipe than is shown in the video with domestic Marsala wine. Wish me luck!

(6,057 posts)Very edible....but not "kick-ass" delicious. I'd give what I came up with a 3 on a scale of 5. OK...... but ho-hum.
The tip on the wine was probably correct....... and I'd add garlic/shallots and green onions to this recipe.

(106,886 posts)If I still have some roasted red peppers in the fridge, they'll get sliced, added to the sandwich. In the mid-eighties here today (and all week per the forecasts). We tend to heat up late afternoon, so a deli-type plate sounds good.

(135,060 posts)Was going to make some burritos but they aren't going to be done in time. So I will probably just snack on some cheese, breadsticks and my new favorite cheese.
