When the Thai basil is growing we eat Thai salad with beef at least once every ten days.

Tonight though it's grilled chicken, grilled local corn and a salad of our garden peppers, tomatoes, cukes, and Italian basil.

Had company over and indulged a bit too much (oh, peach tart, how I love you so!) So sticking with some leftover chicken and a salad to make up for it. Damn guilt

........ over Basmati brown rich with dollop of sour cream and sliced avocado.

I start with a basic idea...... then improvise. Sometimes it works out well... other times not so much.

I do those every time I have leftovers. Throw in whatever meat I have, some potatoes, onions, garlic, maybe some spinach or veggies, and voila!

7. Stuffed tomatoes

We always had stuffed tomatoes in the summer, unbaked. I think the stuffing was chopped celery and cucumber mixed with the scooped out tomato filling. I can't remember what else, pretty sure it wasn't rice; might have been canned salmon or tuna.
A recipe I found online I like: chopped hard boiled egg, celery, olives, ripe avocada, crumbled bacon, and some parmesan cheese. It calls for onion and/or peppers but I leave those out. Stick cooked asparagus spears in if you like. And my grandma always sprinkled paprika on top.

10. avocado omelette

I baked today, so wasn't up for much cooking tonight. I had a beautiful avocado, so I made an avocado omelette. It was improvised.

Two-egg omelette which I filled with dollops of avocado and whipped cream cheese. Sprinkled with chopped coriander. Added a little grated Colby cheese. On the side a small Westphalian ham sandwich on crusty bread. Also chili garlic sauce to spice up the omelette.

White wine.

Maddie has a sleepover tonight and they are celebrating her birthday since Maddie missed her party. They are now on the chocolate mousse cake....I am sure they will up late on sugar!
