(146,218 posts)I've had the meat marinating all day in a most delicious sauce and, after taking the meat out, put the eggplant in there to soak for a bit.
The pork should last us a few days in one way or another.

That sounds awesome, Cher!
If I can get my hands on some elk liver again, I'll die and go to culinary heaven. That's the one thing I miss about living in Wyoming. The hunters never cared for the "pluck", but I was right there with my plate, asking for the liver. Free range, and no anti-biotics crap.

(7,720 posts)Actually, we had him for dinner Wednesday night too. I made fried chicken, mashed potatoes, and country gravy, just like my mother used to make. He's been asking for fried chicken a while and I had some time off, so I cooked it for the first time in years. Tonight, I took the leftover chicken, shredded it, and mixed it with the gravy and made chicken pie, not chicken pot pie, just chicken, gravy, in a double pie crust. He thought he'd died and gone to heaven. I wonder if my arteries can take it.

(39,961 posts)It came from a little grocery store. A muffalatta is a New Orleans sandwich (I still live close by, and grew up on New Orleans). It's an olive dressing on an Italian round bread of about 8" and 1.5" thick, sliced and filled with ham, Genoa salami, mortadella, sliced Provolone and sliced Mozzarella. The olive dressing is the key.
You eat it in quarters because no one can eat a whole one unless they are starving (though as a teenager I came very close to eating a whole one from Giardino's after a day of physical work and had forgotten to eat breakfast )
