I just had a slice of Tuxedo Chocolate Mousse Cake

from Costco.

It was unctuous and tasty, but I suspect it's as much a product of the chemistry lab as the bakery. Anyone ever tried it? Has anyone ever made one?

...the trade magazine for fancy pastry cheffing. The "stuff" that was advertised to the trade was kind of astonishing. Yes, some chemistry lab stuff. Fixers and fillers and so on.
