What kind of cheese do you use
for the enchiladas?

(22,124 posts)but I have made all sorts of cheese enchiladas including a favorite recipe with cottage cheese, a strip of chili pepper and a slice of extra sharp cheddar. I never tried Swiss or blue cheese though .

We went to the Portuguese place for lunch, though: garlic shrimp, flounder, rice, green beans and Brussels sprouts, yellow rice.
Oh and errr, a pitcher of sangria.

(146,218 posts)I am one of those people that can not drink during the day at all. If I ever do, I am done, really done. Even a single beer. Lightweight, I know.
I also couldn't think of another meal after the one you describe. I would also be done, except for a possible snack or some of the leftovers.
You, my friend, are made of something stronger.

(35,622 posts)We bring most of those meals home. In fact, the 'frig is full of containers of shrimp, rice, green beans, flounder.
Love those leftovers. I won't have to cook all weekend!
(but I love to cook, so I prob'ly will)
Oh and here's my sangria trick: add sparkling water. I like it even better than "full-strength."
