I scrounged the trim from one of the filets at work yesterday; going to do a little experiment, grinding it up and bringing it to 80/20 with bacon fat. Going to smash (not the same as smashING!) them and drop them on Martin's Potato Rolls with some sharp Cheddar and thin raw onion. Fingers crossed..

I'm cooling the brine I made for the last of the thick cut pork chops. It consists of apple cider, sage, rosemary, thyme, garlic, salt and a couple bay leaves.

After I brine the chops, I will stuff them with an apple sage stuffing and I am serving them with mashed potatoes and broccoli (but the old man is going to want baked beans, so I will probably doll up a can of those too.

We finally have a genuine Philly Hoagies place in Boulder and the rolls are just right! I'm having one for dinner.

I've got the octopus in a low (200F) oven now, and will let it simmer in its own juices for 4 hrs or so. I also added an orange (juice and rinds), coarsely chopped 1/2 an onion, and some smashed garlic.

After I let it cool in its own juices, I'll probably coat it in olive oil and give it a quick 5 min grilling tonight.

(OK, this is a first for me so, I'll let you know how it comes out.)

I don't think I have ever eaten octopus except in very small sushi portions.

It just came out of the oven after the 4 hrs. Talk about tender! And the orange flavor actually permeated the meat. It's cooling down now, and the juice it gives off is quite a lot. I find the octopus at sushi places tends to be a little tough, since the chefs just do a quick blanch and then ice it down.

I'm going to reduce the juice by 1/2 and make a dip for it. Dinner is not for some time, so this is gonna drive me nuts not to pick away at it. Once dinner comes along, it's a quick splash of olive oil, grill 5 mins a side, we are off to Yummytown!

but after the grilling part, I'm gonna mix it with some pasta, tomatoes, garlic, olive oil, and some fresh parsley for a warm pasta salad.

As much as I love cooking, cooking for one holds no appeal for me at all.

I've got some salad fixings, but might just fill half an avocado with ranch dressing.

And I have some kraft mac and cheese, which is a relatively secret indulgence.

..... a dab in that Kraft cheese mac would kick up the flavor a notch or two. Just saying.

And a 3:1 ketchup:sriracha topping.

But believe me...... you can talk to a polydactyl cat. I had one as a partner for 23 years. I understood everything she said and visa versa.

Only thing better about a flare gun..... it doesn't sometimes miss the litter box.

I think I'm done with pets unless I become homebound at some point.

I've raised my kids and I'm loving the freedom of not being responsible for any living beings.

Well, except my husband, who has to be fed from time to time.

Had two mid-day appointments. Just back home. It's pay day for me. So that usually means Chinese or Thai take out. Or, could do a shopping run. Or, simply a grilled cheese and salad w/ ginger dressing.

Went with a couple friends and I dined on a hotdog and many, many samples of delicious breads, jams, etc and bought most of them too. Plus bought a few fun crafty items, like mittens etc.

Then we went out for a couple drinks, so that was fun too.
