I'm thinking of making a Polish pizza. Suggestions?

I know it sounds wacky!. I'm thinking kielbasa, (obviously), a little bit of sauerkraut, and some gouda cheese. Maybe a bit of horseradish. Any other suggestions?

1. Why not play on the stereotypical bad ethnic joke

and make the Polish Pizza "upside down" with the dough on top. Like a pot pie of sorts.

2. Many years ago, a restaurant in Buffalo made "Polish Pizzas"

They were sort of an open-faced pierogi: kielbasa, of course, farmer's cheese, mushrooms - a big Slavic ingredient, gotta have them - and cabbage. No tomato sauce, as I recall. They may have had potatoes as well, but IMHO they didn't add anything. A dollop of sour cream on top would tie things together.

Or you could go with pickled herring, or beets...

6. what kind of crust are you using?

something done with rye bread dough would be really yummy with those toppings

7. I'm cheating and using Trader Joe's pizza dough

8. I was trying to remember if I've ever seen any kind of

frozen rye bread dough but I don't think I have, I usually cheat and use frozen bread dough though
