I just want a big hunk of that skin right now.

Big congratulations to you fizzgig. It looks totally perfect.

Did you end up changing the oil between batches this time?

We are moving in a week and will be in a slip for a month, possibly more. I would never have a pan with that much oil in it while we are at anchor, but in a slip I will be able to give it a try.

One last thing - I bet that chicken is nearly as good cold as it is hot. Am I right?

it may very well be the rice flour that's throwing the flavor off just a bit (cooked it for my gluten intolerant bestie), but it was still damn tasty. i just cannot get over how moist the chicken comes out with this recipe and the skin is to die for and yes, it is just as tasty the next day

i hope you'll be able to give this a try, it is so worth the bit of effort that it takes.
