(22,165 posts)2 heads of garlic
1 lb of hot sausage removed from casing*
1/4 t dried sage
1/4 t dried rosemary
3T. butter
3 T. flour
3 c. lowfat milk
1/2 c. shredded Swiss cheese
1/2 c. grated Parmesan cheese
salt and pepper to taste
8 oz penne, cooked
Preheat oven to 350 F.
Remove the papery outside layer of the garlic heads. Wrap in aluminum foil and bake until cloves are soft. Check after 40 minutes. Let cool. Squeeze the garlic from each clove and reserve. Turn up the oven to 400 F.
Saute the sausage in a non stick pan and stir to crumble until browned. Pour into a large bowl and stir in the dried sage and rosemary.
Make a roux with the butter and flour and slowly add the milk and stir constantly until thickened. Add the cheeses and the roasted garlic to the sauce and salt and pepper to taste. Reserve one cup of sauce.
Mix the sausage, penne and sauce together. Pour into a large casserole dish. Pour the reserved sauce over the top. Bake, uncovered for 20 minutes.
Serves 4
*this is the original recipe. I am a vegetarian, so I leave out the sausage

(135,060 posts)Usually use ham hocks but traded that in for some smoke turkey sausage with a small cesaer salad on the side.

Q: has anyone cooked the stalks from brussel sprouts? I really like broccoli stalks, as they have a sweetness to them. You just have to shave off the 'woody' exterior, and steam with the rest of the florets. Just wondering if brussel stalks have the same quality...
