A weekend project is making a vegetarian "meatloaf" out of mushrooms, nuts, and vegetables. This again is a recipe from my Meatloaf Bakery cookbook. This is going to be very time-consuming, so I'm doing it in little stretches.
Mollie Katzen has a terrific recipe for it, too, in her new book Heart of the Plate. I'll prob'ly try both recipes, but not in one weekend.
Not that you asked, but in the spirit of avoiding going out in the cold to do yard work, I'll say that Mollie is my most favoritist cookbook author ever in the whole wide world.

(106,886 posts)I don't do rice well, for some reason. Even after 2 years sharing a home w/ Chinese in-laws. Mine comes out mushy. One of my favorite standard Chinese breakfasts - mushy rice, think Asian oatmeal - but not really a dinner rice.

(154,021 posts)it is tasty, it is vegetarian and yes, cleaning them and deveining them takes a while.
Thanks Bobby Flay for teaching me how to do it without a gas stove though... oven on broil.
