What's for Dinner, Thurs., Aug. 28, 2014

I have a bumper crop of tomatoes, but the RG and I are going to our favorite Portuguese restaurant in the Ironbound tonight. I am looking forward to it as we have not been there for awhile.

Plus it's a beautiful day and a beautiful evening is predicted. Plus I am excited about school starting next week. I love my job, at least in the first part of the semester.

BTW, everyone, I sent an e-mail to Lucinda to ask how she is.

2. We went for a wonderful day trip to a remote lake and had lunch with friends lakeside.

Perfect meal - cheese and various hams for antipasto, then two kinds of pasta dishes which we shared. The first were baby raviolis in a cream and truffle sauce, the second taglietelle with garlic and mushrooms. A refreshing red wine and bubbly water, then a perfect coffee with the panna cotta for desert.

Long and leisurely with much good conversation.

Could not ask for better.

I would so love to have taglietelle and/or baby raviolis in cream and truffle sauce. And I'll bet the antipasto was a joy, too.

fortunate I am.

We live here very, very cheaply. The difference is the ability to work wherever there is an internet connection. Most people don't have that advantage, and it is huge. Also, having grown children and no family members that need us at this time makes a big difference, too.

I hope you have an opportunity like this sometime in your life. You deserve it.

I'm having a ribeye steak. Tomato and haven't decided yet about a potato. If I do, it'll be baked (in the microwave).

5. Something, something with the pesto that I made today.

I wanted to freeze it, so I made it using the Epicurious recipe for basic pesto, but omitted the cheese. Then I put it in baby food jars and into the freezer. When I use it, I'll add the cheese. I doubled the amount of garlic because I thought the recipe needed more. Now my house smell like a garlic clove. No complaints from me!!

Now you can add really good cheese whenever you are ready.

Although I made the parents some baked pork chops with salt, pepper, and cinnamon on a bed of apple slices in cinnamon sugar butter. I've moved into that phase where I'm doing more of their shopping, errands, and occasional cooking now that Dad is slowing down more. Mom's still pretty mobile, though, so I'm not anywhere near where Dad was with his own parents, where he went over and prepared every meal of the day for them every day.

in lemon water. Then, I'll chill it. It's too frackin' hot here right now. I'll probably steam up some asparagus, chill that and add some sliced tomatoes.

If I get in the mood, I might throw in a couple of stuffed quahogs into the toaster oven as an appetizer.

odds and sods are in the fridge and pantry. I'll go foraging for fish tomorrow.

Just made egg salad with curry paste and mayo and a mango yogurt....holy crap that was good!
