Spicy kale and lentil curry

http://cookingwiththemark.blogspot.com

Ingredients
2 c lentils
large bunch kale, rinsed and chopped
1 medium onion, chopped
3 T hot curry powder/garam masala
1 T turmeric
1 T cumin
juice of 1/2 lime
pinch of sea salt
chicken broth or water

Directions
Cook lentil according to directions on package. Set aside. Saute onions in a bit of olive oil until it begins to caramelize. Add kale and cover. Cook until kale begins to wilt. Add the spices and salt if desired, cook for a couple minutes. Then add lentils, mix well and cook covered for 5-10 minutes. Add a bit if chicken broth or water if it gets too dry. Serve by itself or over rice. Top with freshly cut tomatoes. I served it with black/purple rice from Thailand that I bought from Trader Joe's. It looked pretty stunning and was quite tasty.
