But yesterday I made chicken enchiladas, served them with refried beans and rice. The only PIA is all the chopping, since I always include lettuce, tomatoes, scallions, black olives, (more) shredded cheese and sour cream for toppings...

While my daughter was in Nigeria, her two step sons and their grandmother all had birthdays.

So today we are having a big celebration.

The menu:

Figs and Melon wrapped in prosciutto
Caprese

Hamburgers
Spinach Salad with Beets, goat cheese and candied walnuts
Baked Potatoes

And a big homemade, absolutely delicious looking Chocolate Birthday Cake!

We went to the restaurant that has the NYC skyline view. Had a great time. Have a culinary story to tell, but have had a few too many glasses of wine to tell it tonight.
