2. Once a week I'll just rummage around the fridge to do up scrambled eggs. Never tire of a plate.

mushrooms, peppers, green onions, and some cheddar cheese, maybe ham. Mmmm, now I'm getting hungry, lol.

And if I feel like it, some kind of sliced fruit for dessert. I have a bunch of sliced berries in the freezer - and a bottle of balsamic that I rarely use - put them together, and that's a really good Italian-style finish.

7. Pork tenderloin

Cut in pieces, dredged in flour, sautéed. Boiled potato and mushroom gravy. A choice of Broccol or coleslaw; I had both. A tenderloin makes a meal for 2 with leftovers. Scrambled eggs sounds really good.

8. fish, salad, rice

Monkfish with sauce I took home from the Portuguese restaurant yesterday. This olive oil is loaded with garlic and peppers and I put it all over the monkfish and served it over yellow rice with chopped vegetables--carrots, Brussels sprouts, and green beans.

Tossed green salad with the usual--cherry tomatoes, cucumbers, scallion, and red pepper. Turkey bacon crumbles on top.

parmesan cheese and lemon. Avacado slices. French baguette with butter and garlic.

stopped at my dive and picked up a pie with sun-dried tomatoes. it wasn't bad, but they didn't fire it as long as they usually do and it wasn't that crispy.

really fits the bill sometimes. There's one place downtown where you can order by the slice - pretty unheard of around here. Can be hit or miss unless you catch which tray just came out of the oven or know some of the staff.

the dive and their sister pizza shop are about the only places in town where you can get a slice. they're hit more than they're miss, but it's really disappointing when they miss.

the pizza wasn't enough, so we're having wings delivered. sounds ridiculous, i know, but neither of us are in any shape to operate a motor vehicle and junk food sounds good.

13. chicken legs with caramelized mushrooms and potatoes

I had a cup of chicken drippings from roasted chickens, and I had two already cooked leg-thish pieces. So I put the chicken in a saute pan, sliced two russet potatoes in, and a few crimini mushrooms. Poured the brown delicious drippings over all, and sauteed until the potatoes were done and everything was bubbly and brown.

Served with peas, and wax beans.

And these delicious deep pink fleshed apples for after dinner snack. Mmmm they are SO good.

i baked some thighs over potatoes and carrots earlier this week and it was outstanding. schmaltzy potatoes are a beautiful thing.
