(106,886 posts)Sauteed zucchini, onion and garlic in butter till just barely browned. Used a cheapo spice mix labeled "Italian Seasoning". Simply an oregano, marjoram, thyme, rosemary and sage blend.
Whipped three large eggs with some half and half. Added to the skillet. Dusted with black pepper. Poked it a bit to cook through while the bottom browned up. Turned down the flame and let it set. Spun the skillet to make sure all was going to hold together.
Topped with diced kalamata olives, thin sliced tomatoes, bread crumbs and a lot of grated cheese. Ran under the broiler to toast the top.
Sliced a wedge to plate and it was like....pizza. Who knew?

I'm trying to get a grip on Mexican cheeses. There are some that I find really unappealing.
So I bought some types I haven't used before and am going to try them in the m&c.
The eggplant looks perfectly perfect. Going to grill it first, then put in the m&c.

(106,886 posts)We both love the basic, off the shelf mix. She makes it as is. I usually add something - grilled diced asparagus, diced tomatoes and green onions, etc. We finally have agreed to disagree. So when we get together for lunch, it's the basic. When I make it just for me it's add on time!

(146,218 posts)This came out pretty well. The cheese was very bland, but the dish was creamy and the eggplant was a great addition.
There are leftovers, which I may fry.

(4,238 posts)Chicken seems to be popular today! I had some leftover, so I'm shredding it, mixing in some chopped potatoes, onions, garlic and broccoli and placing in a ready-made pie shell. Top with some cheddar or gouda, and it's a great way to get rid of leftovers!

(35,685 posts)My appetizer was a plate of different kinds of cheeses I picked up on the way home from work, combined with vegetables. The stores are getting out their Christmas wares and I found some interesting items. Cranberry-chipotle cheddar cheese, for example. I bought a very nice parmesan wedge and some soft cheeses, too.
So, Pinto, cheese is good!
The pepper has a Greek stuffing, with ground beef, oregano, feta cheese, onion, garlic.
I might start working on cauliflower cheese soup tonight.
Also, I'm making romesco sauce tonight, so there are five or six red peppers in the oven, being roasted. I'll use this sauce to put over chicken.

(219 posts)13 bean soup and a vegetarian stuffed peppers recipe I found. I'm not a vegetarian but I thought I would try it for something different.
the cupboard is bare, so i'm cobbling together what i have: chickpeas, frozen peas and carrots and a handful of potatoes and i'll serve it over brown rice.
i did find a surprise ham hock in the freezer while i was digging around, so we'll do beans and cornbread tomorrow night.

(29,098 posts)My inlaws usually send us those Kansas City Steak packages for holidays. Last week I found two burgers left from last Christmas! Usually when I dig deep in the freezer I expect to find only those blue ice packets that I feel obliged to keep. Must have at least 10 of them....Why?????

(20,234 posts)I got a case of 40 lbs of pears for 2 bucks, and 38 apples for a dollar recently. So tonight I tried sneaking a ton of them into a salad, I was happily chopping til my husband walked in and accused me of just making fruit salad and leaving no room for lettuce and stuff.
Anyway, the salad had homemade pickled mushrooms and chopped ham added in, and the pasta was with tomato sauce and ground beef. It was good, and I have leftovers of the salad for lunch tomorrow.

(29,098 posts)I also have some fresh pineapple cut and a banana that looks like it won't survive the night. I see some greek yogurt in it's future.
