what's for dinner - wednesday, march 18?

i fully expect to be at work until at least 11, so no cooking again tonight. i have some pizza at work leftover from yesterday, so that's what i'll have. the husband is just going to have to fend for himself.

I've got a cold and am going to make some chicken noodle soup today. That and a Caesar salad ought to take care of me.

work is an absolute disaster right now, so i'm just in survival mode. the good news is that they've approved overtime for the next month or so, so i'm going to put in as many hours as i can manage and use the money for a birthday road trip.

i've always wanted to see dinosaur national monument, so that's what we're going to do. the plan is to leave on a friday, spend one day in dinosaur, one day in flaming gorge and then home on monday.

i would like to camp, but the weather will still be a crapshoot, so hotel it will be.

the last couple of weeks have been simply awful and it feels good to have something to be excited about.

My favorite area is the Escalante Stairs (I think that is the name) and Zion, but I don't think there is any part of that state that isn't stunning.

Planning a trip is my number cure for the blues. Just do it!

on a weekend but great. If you're a rafter all my friends think the Yampa and Green Rivers and canyons are some of the best in the world when they're running high.

but i will probably want to stop for pics along the way. the only thing that concerns me about the drive is the weather, who the hell knows what it'll be like.

Except I don't have any chicken, so I won't be making soup.

I'm thinking tacos or a steak salad. Whatever it is, it will be a minimal effort.

I'm about to start my broth and I am hoping that the smell alone will cure me.

After, I will throw in some carrots and then noodles and not much else.

My house cleaner was here yesterday and insisted on doing the laundry because I sounded so bad. The turkey soup is looking good, but the remaining meat isn't falling off the bone yet. I can wait until tomorrow.

In keeping with the soup and sickness theme, I'm making turkey rice soup with the leftover breast that I ate last week. Unfortunately, the bone is too big to have the entire thing in the pot at once. That's for tomorrow night.

Sorry to hear you're working such long hours, but it sounds like the trip will make it worthwhile.

assuming I get home early enough from work. (Tomatoes, zucchini, mushrooms on the grill, with steamed rice.)

Otherwise, if too late, then it's a grilled cheese and I'll save the halibut for tomorrow.

I made a top sirloin roast 2 days ago and have some left.

I can use wide Amish noodles. I'll make a beef stock base roux , spice it up a bit and add mushrooms. Having crusty bread and red wine on the side.

15. Prime Rib Roast

but I overcooked it by about 15 minutes, unfortunately. It was still tasty, but didn't have the ruby center that makes a prime rib roast ... a prime rib roast. It was kind of small, so that may have contributed. I used a meat thermometer, but one second the center was 109, and the next it was 150 .

Do not talk to sister on the phone while making a roast.

I would love to try that cake! It is made with almond flour, too! Wonder if I could substitute a sweetener and still have a good result.

The Portuguese restaurants around here serve the most wonderful orange cakes. They aren't as pretty as that one, though.

My neighbor and I went in on the St. Patrick's Day meal. Sort of a mix of styles but came out great. Leftover dinner tonight, Reuben lunch tomorrow.

....and a whole lot of steamed broccoli and cauliflower. I never think of making a hamburger steak and we have cut down our red meat to a couple of times a month. But this was it, and it tasted good and savory.

Paired with Krusteaz brand Italian herb flatbread.

Recipe for the sausage bake"
1 lb bulk Italian sausage. I did half sweet, half spicy.
1 lb penne pasta, or whatever kind of pasta you prefer
1 green pepper sliced
1/2 onion, sliced
two jars vodka sauce
Boil up the pasta according to directions. Meanwhile, brown and drain the sausage. Cut up onion and green pepper. When the pasta is done, drain. I didn't rinse. Put into a casserole dish, several good twists of the pepper mill. Then stir in onion, green pepper, and sausage. Add the vodka sauce, mix well. Bake at 350 for 30 minutes. Cover the dish. I didn't, and it was a bit dry. I also added some grated parmesan and romano cheese. Wonderful.

The Krusteaz bread, I let rise quite a bit longer than the package calls for. It says 10 minutes. I gave it a good twenty minutes in the bowl after mixing, then made the flatbread shapes, put them in the pans and let them rise about another 15 minutes.

It's a great combination. Add salad and red wine as needed.
