What's for Dinner, Thurs., June. 4, 2015

I made the RG's lamb-tomato sauce. He gave me explicit directions, and for the first time, I actually made something as good as he would!

I put in chopped eggplant and tonight I will stuff poblanos with it and top with lots of feta cheese. That's a great combo: ground lamb, tomatoes, and eggplant. There is a lot of onion and garlic in the sauce, too, as well as olive oil.

For an appetizer, crudite' with dip (jalapeno ranch yogurt salad dressing). I have cut up radishes, cucumbers, celery, and carrots. Also celery and broccoli that I par-boiled. Asparagus from the garden.

Dessert will be watermelon and pineapple.

i expect the husband will polish off the last few ribs, but that still leaves me mashers and broccoli slaw. i'll probably round it out with a bowl of cereal if i'm still hungry.
