I'm starting the thread a little early, since I'll be at a union lunch that will go on for the afternoon. It's an executive board working lunch, but finally the "protests" to our union prez have paid off. He loves that bagely-sweet roll-bready stuff. The rest of us insisted he change and bring healthy food, so I think we're getting a Whole Foods catered lunch today.
I liked livetohike's idea of a curried kidney bean dish last night, so I made it and was it ever good! This will be a keeper, for sure. I used a recipe off a blog, once I got to the spot where I realized I needed a sauce to put over the beans I pressured cooked. Here's the blog recipe I followed, and I learned this is an Indian dish called "rasedar rajma:"

(35,688 posts)Our union prez did a pretty good job! We had a fruit plate and a vegetable plate. The quality was very good, and they definitely were not your average vegetable as they were bursting with flavor, in addition to looking good! He also ordered several plates of various cheeses and one with cold cuts. There were the standard salads, like cole slaw, macaroni, and potato salad.
He still went overboard with the desserts (he must love sweets), with all kinds of cakes and cookies. They were "Whole-Foodish" cakes and cookies, but hey, they still had sugar in them and people aren't eating sugar any more. Hardly anyone touched the sweets. People were enthusiastic about the vegetables and fruits, though!
The funny part was a special order was made for me: Chicken parmesan! I had remarked that I loved that dish at a previous meeting. What a thoughtful union prez, ya' think?

(2,016 posts)with roasted Brussels sprouts. Also, I may make something out of cucumbers (wish I had yogurt in the fridge). Some sort of salad. If I'm not that lazy after work, some rice pilaf, too.
