what's for dinner - tuesday, june 30th

there's some bbq pulled pork leftover from camping that needs to be eaten, so i'll heat that up for us and we'll polish off the pasta salad.

i'll have to get back to cooking tomorrow, so i'll dig through the freezer and pull something out to thaw.

I braise mine in the oven, in chix stock flavored with cilantro, oranges, jalapenos and onions (and ancho chili powder and cumin) in a casserole dish, covered. After 3 hrs at 275F, I put the pork on a cookie sheet and under the broiler for 10 mins to crisp them up.

With guac, of course. Rice and beans as sides.

Today is carnitas day!

I'm adding macadamia nuts to the panko.

Three-bean salad with homemade French dressing. Haven't made that in a while.

And finally, Persian cucumbers in dill, scallions, and sour cream.

I know, I know. It should be a much more special meal, considering our NJ gov has announced he's running for Prez' and all.
