Was planning on chicken in the dish but forgot I baked what was on hand earlier. So it's a veggie & rice Thai meal...

This turned out pretty darn good. Vegan and cheap! I used tomato puree.

& went crazy. So it's carne asada tacos with fresh tortillas, tamales, rice, beans & he made the guac.
