what's for dinner - sunday, july 12th

i'm going to try my hand at some cannabutter and oil today (gods bless living in colorado) and am considering ways to use the oil tonight. i'm thinking about a small batch of canola oil and using that to fry up some chicken cutlets or tenders and then a small batch of olive oil for a vinaigrette.

the butter will go for sweets, probably brownies and rice crispy treats, but those will have to wait until tomorrow since the butter has to chill overnight. the husband will come home to a nice treat, though.

a buddy of mine was nice enough to donate to the cause on the condition i share with him. i think that's a pretty good trade.

So many good toppings to use - got eggplant, zucchini, all sorts of peppers and tomatoes from the garden, and some local feta and ricotta from a farmers market, some parmesan reggiano - tons of fresh basil and parsley. just need to decide which direction to take it!

I'm making a salad using my new "Vegetarian Flavor Bible" by Karen Page. This is a big, thick book with listings of flavor afinities. I've decided these will be the ingredients:

cauliflower
haricots verte
scallions
lemon ricotta raviolis (from Trader Joe)
rosemary
peas
walnuts, toasted

for color, a T of minced orange pepper

lemon vinaigrette

And I may make some watermelon slushies, per the instructions in that drink ideas brochure that I posted on elleng's thread about the top recipes at the NY Times this week.

The housemate is now on her trip to Alaska, so for a while, at least, I don't have to do actual 'meals'.

I'm looking at picking up some vodka, made from corn or wheat, at least 100 proof. I want to see if I can make some raspberry extract from the juice, rather than from the berries themselves.

Of course, I can't drink alcohol any more, so it would have to go off to someone else anyway.

I made a tenderloin last week and have just enough left for a stir fry.

I am not familiar with canna butter, but it sounds like everything I love.

i wound up making a big batch of vegetable oil since that's what was in the cupboard (and the husband crabbed about never having luck with olive oil) and skipped the chicken in favor of just a big salad. used the oil squeezed from the dregs to make the dressing - tarragon vinegar from my mom, a splash of apple cider vinegar, a splash of lemon juice, garlic paste, brown mustard, reduced white wine, fresh parsley and s&p - and tossed with arugula, cherry tomatoes, cukes, roasted bells, blue cheese and candied walnuts.

it's hot as hell in here from running the stove top and the oven, but it was well worth it.

didn't mean to come across as i had made actual vegetable oil.

Unless you bring peas in the form of guacamole as a side dish.

Or in the potato salad (swear to God, I've seen this).

Well, maybe just don't bring peas under any circumstances

ingredients. I hope you will eat a treat for me!

Our family feasted today on grilled chicken, mashed potatoes, grilled summer squash and zucchinis, crowder peas, sliced tomatoes, cucumbers with sour cream, homemade bread, pound cake with fresh peaches, blueberries and whipped cream. We don't eat like this every day, but I like to have leftovers to send home with family members. We are grateful to eat food that we grow on our own property and have enough to share with others.

i picked up some early peaches on friday and they should be ready. i can't wait to cram one in my face.

i may have to grab some vanilla ice cream tomorrow and cook the peaches in some of the butter to serve over it. i just got lucky enough to be born here

I'm pan-searing the cod in butter. A salad of cukes. tomatoes and onion with a tzatziki sauce as a dressing. I may as well use the tzatziki as a tartar sauce too.

11. Pork Chops Baked with Apples

I found a recipe in an old Mexican cookbook for this pork chop recipe. It called for 5 or 6 pork chops, 3 apples, peeled and sliced, 1/2 cup raisins. cup of water, 1/3 brown sugar, 1/4 cup vinegar. Season with salt, pepper and sage. Bake in oven at 350 degrees about 1 1/2 hours. The pork chops were very tasty. The fruit made the pork chops moist.

I made Pam sweet potatoes. This is my favorite low fat way to make potatoes and sweet potatoes. I peeled and sliced the raw sweet potatoes, placed in shallow baking dish that was sprayed with Pam. Covered with foil and baked in oven until soft. Removed cover and sprinkled a tiny bit of brown sugar (1/4 cup) and a few shakes of cinnamon. Baked uncovered about 5 minutes more. I don't like to leave them in long, I like the brown sugar to still be a little grainy. If left longer, the brown sugar melts. Either way is good.

Finished off with some fresh green beans and a slaw made with cabbage, carrots and a little of the left over apple, dressed with ranch dressing (don't like sweet coleslaw).

I had made a white sheet cake on Saturday and iced it with Italian Cream icing with coconut. While our dinner was cooking, I had my trusty little Krup spinning away, making us some fresh pineapple ice cream to go with the cake.

Nice Sunday meal, I will try this pork chop recipe again.
