What's for Dinner, Tues., July 14, 2015

I have a tossed green salad already prepared, and so many choices for an entree. The RG left me some meals in seal-a-meal bags that he had made.

Regarding salads, I am making generous use of my herbs, which I have growing in pots outside my door. They add such interest to salads. I just can't get over what a tablespoon or two of oregano, basil, or rosemary (or all three together!) can add to the taste of a salad.

Last night's atrium dinner (yesterday's post) had an unexpected surprise: a couple lbs of roast beef! Yes, they asked if we wanted to take anything from the buffet with us, and so of course everyone said yes! I chose the roast beef because they had just put a fresh one out.

So maybe I will have cold roast beef when I get home tonight around 9:15., along with my salad. Also, yesterday I harvested horseradish, so maybe I will peel some, mix it with vinegar, and have that with the roast beef. I've never grown fresh horseradish, so this is new for me.

I work nights so for my "lunch" I packed red pepper roasted Hummus (sp)
and some celery … this is the first time I have had it …
looking fwd to it

Out to dinner tonight with my best bud to celebrate my B-day today. After awaking with a pain in my hip, I certainly feel my age today!
