3. Do you grate ("rice") the cauliflower and boil till just tender?

I've never tried that, but I've got a bunch on hand - the growers have harvested all the cauliflower and broccoli in their fields, so there's a local glut.

and then take a potato masher and mash it up.

you can grate it and fry it also … both work .. it is yummy ….

Visiting my daughter, grandson (18 months) and son in law for 2+ days, daughter asked if I'd help fill her freezer for when her expected baby is due in October, so this afternoon I made 3x my usual beef stew recipe. (I FIRST 'invented' it when daughter was a babe in arms, 30 years ago!)

Dredge cubed beef in flour that's been sprinkled generously with garlic powder, salt, thyme, and paprika. Brown the beef in olive oil.

Add layers of cubed potatoes, canned peas + carrots with juice, jar of pearl onions with juice, stewed tomatoes (I use Del Monte), bay leaves and red wine, and let it stew, top on, mixing occasionally. Move top off center a bit, to thicken, for a while. Adjust seasonings.


Hadn't made it in quite a while and happy it STILL succeeded. Wish I could return to kitchen for seconds, but don't want to wake the 'baby!'
