I'm trying to make turkey nuggets, but I can't find panko, despite going through my entire freezer. Wow. What a lot of stuff to use up. But I digress.
So I've got turkey tenderloin cut up into bite-sized pieces, and I need some breading. I'm looking for a recipe for that. I already grated some Judy bread, which is made with butter, so it will outstanding for this purpose. Have to find a good seasoning combo, though.
I already made a salad, and the turkey will go in the salad.

(14,733 posts)In a reversal of the usual, the housemate was home while I was out working today, so she got em going in the crock pot.
My old boss, who also owns a coffee shop, is actually doing something very similar to my extract experiment. He's making liqueurs, mainly coffee based ones, trying different recipes, and when he finds ones he thinks are good, will be selling them in his coffee shop. But it looks to basically be the same setup as the extracts - start with a flavourless or simple alcohol base, and steep ingredients in it, shaking it daily for however many months, then strain out the non-liquids.

(35,687 posts)My friend Anna makes coffee extracts. Another, a friend of a friend, gave me some coffee liquere. Oddly, however, I find that Anna's is so much better than the first bottle I was given. I don't know why one is much better than the other.
Erich, I think your extracts will make fabulous Christmas gifts. People love getting things like that for the holiday.

(2,016 posts)Not really into "fasting days", but eating one light meal for a day helps me out. Tonight will be a grilled cheese sandwich (pepper jack and tomato) and a small salad.
ps: yesterday's golumpki came out really good - the crushed San Marzano's I poured over the top before putting it in the oven made everything so sweet - without any added sugar. The smoked Hungarian paprika made the filling "pop" (which wasn't part of the original recipe).

My changes:
I used a 28-oz can of crushed San Marzano's (Not the 15 oz can of sauce). Poured the remaining tomatoes over the whole deal, allowing for the 1/2 cup of such into the filling.
Skipped the sugar. (Oven baking will bring out the sugars in the tomatoes.)
Used crushed garlic instead of garlic salt.
Added 1.5 teaspoons of smoked Hungarian paprika - for a kick.
Totally skipped the cornstarch/sauce at the end. No need when using the crshed tomatoes.
Easier than I thought, having not had/made this in 30 years!

Lemon pound cake with lime glaze.

I wish I had used more caramelized onions in the gratin.
