Another Thanksgiving done and done.
Hours of planning, prep, and cooking.
Over in about 30 minutes.
13 lb. mayo turkey*, cornbread dressing, oyster dressing (in the south it's not stuffing, it's 'dressing' if it's cooked outside of the bird), 'smooth' gravy and gravy with 'bits' (minced liver, gizzard, heart), roasted root veg, sweet potato casserole (which was really pretty good, it had roasted walnuts in it), garlic mashed potatoes, cranberry sauce (canned and crushed berry), and the ubiquitous rolls-and-butter.
AND FOR DESSERT...like I really needed dessert...pumpkin soufflé and pecan pie.
I'm not a big fan of pumpkin, but this was tasty.
I do like pecan** pie. It's my favorite pie. This one was exceptional.
I complimented the lady who brought it.
I wondered if she had made it or bought it, but I was too polite to ask.
If she made it I'd sure like to get the recipe.
Guess I'll never know.
We had rounded up all the 'strays' in the neighborhood. Friends who had no local family to celebrate with. Four couples.
Six libs and two clueless repugs.
We did NOT discuss politics!
All in all a pretty damned good turkey day
*Mayo Turkey: 1/2 cup mayo mixed with 3/4 tsp. nutmeg, 1/8 tsp ground cloves, 1/2 tsp. paprika, salt and pepper. Mix well and use a pastry brush to lightly coat turkey. Results will be the most tasty and juicy turkey you've ever had.
**Pecan: It's pronounced 'puh-KAHN'.

Pecan Pie
I just use the recipe on the Karo Syrup bottle (http://www.karosyrup.com/Recipe/Classic_Pecan_Pie) with these changes:
Cut sugar to 1/2 cup
Increase vanilla extract to 1-1/2 or 2 teaspoons
Add 1/8 teaspoon salt.
Increase pecans to 1-1/2 cups of broken pecans, not halves or chopped
Use a deep dish 9" pie shell
The most time consuming part is breaking up the pecans. The hardest part is getting the well filled pies in and out of the oven. And not eating them before they get carried off to the feast!
