I'll finish them with BBQ sauce under the broiler. I rarely go low-n-slow on my ribs, but this rack I bought was particularly tough (must have been from an older pig). Anyway, the second 1/2 rack is in the oven at 275F for 6 hrs.
With baked beans and a mac salad I made this morning.
