What's for Dinner, Sat., Jan. 30, 2016

Appetizer: olive crackers with red pepper hummus.

Asparagus, tomato, and feta cheese salad. I roasted the tomatoes and asparagus yesterday.

Chicken sausages with broccoli/garlic; might put in some egg noodles with cream sauce.

and we have all the windows wide open, I'll be grilling out tonight.

Steak for the housemate and my parents, hamburger for the dogs and me.

Spent the morning working on the dining room floor. I've got about a third of the carpet cut out, and about 2/3 of the padding and the tiles underneath out, so it's down to slab. Up until today, I was just rolling the carpet aside to take up padding and tiles, but we have to get all the padding and carpet sections out to the curb for trash day Monday. I have to see how sticky it might be where the vinyl is in the kitchen, hallway, bathroom and pantry to see if I also take that up before the flooring guys get here, or leave it for them to do on the day they put the new laminate in. Thankfully, we've got 18 months to pay before interest kicks in, or this wouldn't have happened, even though the dining room carpet had gotten so disgusting that even repeated steam cleanings just weren't getting rid of the smell. Still, the new dog FINALLY seems to be clueing in to how housetraining works, and we're having fewer inside accidents. The new stuff is supposed to be completely 'kidproof, waterproof, petproof', sealed on all sides so that even if we were flooded, the laminate wouldn't warp and buckle.

from the freezer. With tortilla chips. Not ready yet to get cooking after my hiatus. Fortunately, there be leftovers in the freezer.

For dinner I made mashed potatoes with onion/vegetable broth gravy and meatless corn dogs.
Not sure what madness drove us to this, but it was quite good.

Tomorrow, we're attending a birthday pot luck lunch with our carnivorous relatives and we're breaking the vegetarian streak to do-

Crockpot Italian Beef Sandwiches (pron- 'sangwiches')
5# top round roast
2 -24oz. jars pepperoncini (salad peppers) - liquid reserved for cooking
2 small onions
6 cloves garlic
3 tsp each - rosemary, oregano, thyme
2 tsp each - ground black pepper, turmeric, smoked paprika
DO NOT ADD SALT!

Drain pepperoncini liquid into the crock pot
Add the beef, then cut 1" slits into the beef and tuck a garlic clove into each
Spread herbs and spices on top of the beef
Remove stems from the peppers, add to crock pot
Halve the onions, add to crock pot
Cook 10-12 hours on low

Loosely shred the beef by rotating a large serving fork through it (while still in the crock pot) about an hour before serving.
Serve on crusty french rolls - spoon cooking liquid over it if you'd like.
Add either/both shredded mozzarella and giardinara peppers

Monday, it's back to vegetarianism.
