What's for Dinner, Sunday, Valentine's Day, Feb. 14, 2016

I'll bet we have a lot of Valentine's Day dinners at home this evening, due to the cold pervading a good part of the country.

My valentine is in the mountains of N. Carolina this evening (food show), but we had a couple of Valentine's Day dinners prior to his leaving that we both enjoyed very much. I posted about one of them at the end of the Thursday thread.

It is so cold here tonight that I think I will slow-roast vegetables as a way of keeping it a little warmer on that end of the house. It is 15 degrees in NJ. Then I will make up more of that chicken soup I made for my friend. Here is a pic I took when I put everything in the slow cooker:

so now that various roads around the county are closed due to snow, ice, jackknifed semis and the like, we're snug in house, with probably the next week's worth of meals planned out. Tonight we did cheesesteak sandwiches, and I'll be starting a stew tomorrow morning.

Very pretty out, especially when a crowd of cardinals moved in to pick over the feeder this evening.

Ever since my second generation Italian husband discovered (last week) that "scampi" means "shrimp" in Italian, he's been calling shrimp scampi "shrimp shrimp" No reason not to love that man

marinated chicken breasts over night in sour OJ and onions
(sour OJ mix Lemon juice, lime juice and OJ )
soak the chicken and onions in this.
pan sear or grill the chicken
take the onions and sauté until caramelized.
serve with black beans and white rice.
it is oh so good.

4. leftovers from lunch

we drove up the canyon to a little bar/restaurant/venue on the river. i had a turkey, bacon cheddar sandwich and husband had a double-patty burger with bacon and pepperjack.

work has been kicing my ass and it was great to get up into the mountains.

recipe from Emeril as a guide. It was pretty good, but I think it needed more liquid. We also had steamed broccoli, field peas and tomato/cucumber/green onion salad, and cornbread.
