What's for Dinner, Sat., Feb. 20, 2016

Stuffed peppers. The stuffing is made up of bolognese sauce, rice, chopped onion, garlic, and bits of vegetables like carrot, green beans, cubed rutabaga, etc. I will top the peppers with cheese, which will melt in the oven. Yum; love these stuffed peppers.

Cucumber salad with sour cream and dill.

I have a political organizing meeting at 5, so I hope to have this all ready to come home to later.

1. Corn and Fish Chowder

You dice up some bacon and cook it (use your judgement. About a half pound I think) Pour off most the grease. Add 1 diced onion, cook until translucent. Dice up several stalks of celery, mince 2 garlic cloves and add to the pan and saute until cooked. Add 2 potatoes cubed, 1 tsp dry thyme, 2 bay leaves, A quart of chicken broth, one can of corn and simmer until the potatoes are tender. Cut up 2 lbs fish, tilapia or any white fish will do, in to bite size pieces. Add to pot and simmer until fish is almost done then add a pint of half and half. Salt to taste. Remove your bay leaves and serve with chopped green onions on top. MMMMMMM

Oh, and applesauce I made out of apples that had a great taste, but didn't have enough crunch. I threw in a couple of Granny Smiths I had on hand and gave it all a good dose of sugar and cinnamon. Delicious!

with lettuce, tomato, sour cream and hot sauce on flour tortillas. Oh, and roasted jalapenos.

It does make a mess.
