What's for Dinner, Thurs., Feb. 25, 2016

I made two eight-inch pizzas with roasted cherry tomatoes, roasted yellow peppers, spinach, bits of Italian sausage, scallion, and mozzarella and parmesan. For the crust, I used low-carb wheat tortilla shells.

I still have to make a tossed salad.

For dessert, it will be something with the fresh strawberries I bought yesterday.

I may also do some breaded turkey cutlets later to have something to take to work tomorrow. I like to do them with chopped herbs, parmesan, and panko, however, I also have this incredible chipotle marinade.



What's it gonna' be?

There's a bunch of chard that has to used. Renate wants potatoes. I don't. We know how that's going to end.

We're having homemade spaghetti with puttanesca sauce, buttered fresh bread (hubby makes all our pasta and bread...yes I know I'm lucky!) and a salad. Retreat season is back in full swing so I'll be cooking for 150 folks this weekend. Sprained ankle still a little achy so good vibes much appreciated

4. Something bland

I had a couple of slices of pepperoni pizza at lunch (local place), and the pepperoni that was used is giving me heartburn to the max. Still.

I was going to make salmon-miso soup, using some leftover salmon, but I need dashi and daikon anyway - which I'll get tomorrow.

So, I'll have something on (slightly burnt) toast.

Now ... where did I put the Tums?

Nothing special. Might make some soup to go with (and by "make", I mean pull out of the freezer)
