What's for Dinner, Mon., April 18, 2016

I'm going to take a pie out of the freezer. I don't know what kind it is--the RG made it. And I'll put together a salad to go with it, as tonight is a night I work late.

or, as most of the world outside of Eastern Kentucky knows them, pinto beans. Fresh chopped onion, hot chow chow, and corn bread in the cast iron

Chow chow is a cabbage relish traditionally using the last of the summer's garden bonanza. My grandmother made it using green tomatoes, cabbage, green peppers, onion and pickling spices. She always made a few jars for me using hot peppers. Good memories I buy it at the market now, of course, since she's been gone many years. I know you garden so you should Google a recipe for this fall

and made an alfredo sauce casserole with gemelli pasta.

So tonight we had chicken caesar salads. So easy. Chop the romaine and a couple of tomatoes. Slice some avocado. Open a can of olives. Boil one egg per person. Make some croutons out of sourdough bread with fresh rosemary and olive oil. Cube some white cheese and some deli chicken.

Plate. Dress with caesar dressing -- or bleu, or whatever.

Tonight I am baking stuff to take to the Bernie campaign office tomorrow to feed the staffers there. Big ginger cookies, Key lime cupcakes with orange zest frosting, and blueberry cornmeal muffins. I love to find an outlet for my yearning to bake.
