What's for Dinner, Fri., Apr. 29, 2016

Yay, it's the weekend!

No dinner for me tonight. I'm going to snack evening long. Some of the items I'll choose from:

Chinese noodles and General Tso's, also sesame chicken

Pizza

Nachos

Broccoli in orange sauce.

Talenti (milk chocolate)

Fun! I am so psyched that I don't have to work for two more days and I can hang out with my kitty cats and play in my garden.

Chinese-based sauce for the wings (honey, hoisin, oyster, soy, garlic, ginger, chilis) , with a veggie lo mein (sugar snap peas, Napa cabbage, carrots and green onions).

Searching desperately for a good movie to watch tonight...

restaurant. One of those meals you will never forget the taste of.

It was their version of shrimp scampi - but had onions (raw but broiled dark on edges), and fresh tomatoes, also charred. All in lemon butter sauce.

I am sure, I will fail again - but it's fun trying.

Never seem to be able to recreate the lemon butter sauce - and I am sure it was broiled in a super hot commercial broiler.

That, and saute of spinach/kale and hash brown potatoes (boil first, then fry).

For you....noodles are the love of my life !!! enjoy !

the charred tomatoes and dark edges on the onion. Now you'll have me trying to recreate your long-ago Italian restaurant experience! Based on what you said about the lemon butter sauce, though, I'll bet the RG could figure it out. Whenever I want to do something like that, he'll ask me questions, I answer them, and then he gives me an educated guess on how they did it and how I might be able to pull it off.

However, I'm wondering if, in this case, it's the super hot commercial broiler. If you have a gas oven, you could prob'ly approximate it by having the broiler heated up for a while before you put the dish under it.

Just a thought.

First time I'd ever made it, and boy, was it good!

I had a couple of boneless chicken breasts and about 4 boneless thighs. Trimmed off the excess fat, salt & pepper, and browned them in olive oil. Meanwhile, into the crockpot went a 28 oz can of diced tomatoes, one 6 oz can tomato paste. Half an onion sliced, 1/2 each red and green pepper also thinly sliced. 2 bay leaves, oregano, tarragon, celery salt, oregano, and basil. When the chicken was browned, I made a roux with 3 T butter, 3 T flour. When nicely browned I added chicken broth. Probably a cup and a half but I don't measure, so just use your own judgement here. Oh, and I also peeled and chopped up a carrot for flavor. Everything into the crockpot, a good stir, and left it on high for 4 hours. Normally I prefer to do the crockpot thing on low, but I slept late and got a late start today.

When it was just about done, I boiled up some spaghetti. OMG it was wonderful. My whole house smells wonderful also.

Two days ago a neighbor brought over some grilled steak, and today I returned his bowl with the chicken cacciatore. Made me feel like a good neighbor.

I have frozen up the leftovers. I live alone, and the main downside to that is that most things worth fixing make up in larger amounts than I can eat right away. Thank the various deities for freezers.

As an aside, I love my own cooking. I am very fortunate I am merely somewhat overweight, and not 600 pounds.
