After all the burgers this Memorial Day weekend, I'm up for some Italian. I would like to make lasagna, and I have all the ingredients. No shopping necessary.

We're having leftover mac & cheese, speckled lima beans, steamed broccoli and salad.

And you always lose time in one of those deals.
I am envious of your speckled limas and also the curried chicken upthread.
Alas and alack, I cannot have lasagna, speckled beans, or chicken curry. You might wonder why, and even if you don't, I'm going to tell you.
It is because I reviewed our thread here at C&B which was at the beginning of the year. It was about New Year's food resolutions. Well, mine was to cut down on food waste.
I have actually been very good about it. In the last month, I have only thrown out one zucchini, about 1 cup of salad greens, and a teensy bit of pasta--about 1/3 of a cup.
I am also reading a book about food waste: Waste-free kitchen handbook : guide to eating well and saving money by wasting less food.
After experimenting with this, I hope to do some classes on this topic.
OK, so tonight it's goodbye lasagna, and all the cravings I have for it.
I am having my chipotle pork, which I already made for Memorial Day, and so it's leftovers. To go with it, I am making a cold soup. It is butternut squash, pear, ginger, and leeks. It is a chilled soup, and it has a dollop of creme fraiche on top. Yum.
All of the ingredients I have in my kitchen, so I have to use them up so they don't go to waste.
This is a discipline thing. You have to do some things you'd rather not, but I want to achieve my goal because I believe in it.

and then your coordinates were off! I am happy to read a post that sounds like you are back with us!
Our family trying to be more aware of our intake and output and trying to put less into the kitchen compost, less into the communal garbage collection. We are doing better, too.
